7-Day Tomato Stew
- 3 C crushed plum tomatoes
- 2.5 C pasta sauce
- 0.5 C tomato paste (1 small can)
- 6 green onions, thinly sliced
- 2 C beef broth
- 1 bunch celery + younger tops, thinly diced
- 2 C green beans, slice to 1/2 iinch
- 2 green bell peppers, diced
- 2 lbs carrots, sliced
- 2 tsp chili powder
- 1 tsp coarse salt
- 2 tsp paprika
- .125 tsp cayenne pepper
- 2 tsp prepared mustard
- 1 tsp ground black pepper
Starting with celery, soften all vegetables in large stock pot. If using fresh
green beans, cook until very soft (20 minutes boil should work) then slice to 1/2 inch.
Combine all remaining ingredients, and simmer for 30-90 minutes. Supposed to be good for
health, and cause low insulin spike.
