Spinach and Tofu Soup


Spinach and Tofu Soup



Wash the spinach leaves and chop. Cut the tofu into bite size pieces.

Bring the stock to a rolling boil. Let boil 5 minutes and skim off any froth on the surface.

Add everything but the spinach and boil 2 minutes. Add the spinach and simmer 1 more minute. Adjust seasoning and serve.
