Moroccan Beef and Lentil Soup


Moroccan Spice Mix: Soup:
Mix spices, set aside.

Sauté onion and garlic for 3 minutes at medium heat. Turn heat up to high, add beef and cook until browned. Add 2 Tbs spice mix, cook further 2 minutes until fragrant. Add carrot and celery, cook for another minute.

Add stock, tomato, water, and remaining spice mix. Bring to a boil, then cover and simmer on low heat until lentils are soft, around 20-25 minutes. Add zucchini and green beans, cook another 10 minutes.
