Indian Lentil Soup
Wash the lentils. Place in a covered pot with the water, salt, and turmeric. Cover and boil (20 minutes for red lentils, 35-40 for green).
Heat oil. Saute all vegetables until softened, about 3 minutes. Add all all remaining ingredients except lemon juice and cilantro. Saute for another 2 minutes until fragrant.
Combine vegetables to lentils. Add 2 cups water, and boil for 2 minutes. Add lemon juice and cilantro.
Variations: Add/substitute other vegetables including tomatoes, peppers, kale, ginger, etc.
