Chicken Stew with Garden Vegetables
- 1 lbs boneless, skinless chicken breast
- olive oil
- 2 C chicken broth
- 5 small potatoes, sliced
- 2 large carrots, sliced
- 4 cloves garlic, minced
- 0.25 tsp white pepper
- 1 jalapeno pepper, finely diced
- 2 tomatoes, diced
- 2 small onions, diced
- 0.25 C fresh parsley
- 0.25 C fresh basil
- 0.25 tsp salt
- 0.25 tsp pepper
Heat the oil and saute the chicken until lightly browned.
Combine everything in a large crock pot, with enough broth (or water) to nearly cover everything. Cover and cook on LOW for 6-8 hours.
