Brie Mushroom Soup



Melt butter in large pot over medium high heat until it begins to get foamy and turn brown. Immediately add the diced onion and mushrooms. Season with salt and pepper. Reduce heat to medium and stir once. Saute untouched for 5 minutes, or until liquid has mostly evaporated.

Add flour and stir to coat. Add dried mushrooms, if available. Use an immersion blender to puree the soup to desired consistency. Add chicken broth and bring to a boil. Reduce heat to simmer.

Add cubed brie and continue simmering until melted (okay if a few chunks won't melt). Add milk to soup and stir in. Turn off heat, and adjust seasonings if necessary. Serve hot, garnished with croutons and/or parsley, if desired.
