Truffled Pommes Anna
Preheat oven to 450F.
Combine 2 tsp thyme and salt in a small bowl.
Drizzle butter into cast-iron skillet coated with cooking spray. Arrange layers of potato slices in a circular pattern, sprinkling each layer with thyme and salt.
Cook over medium-high heat for 6 minutes without stirring.
Cover with foil and bake for 20 minutes on bottom of oven rack.
Uncover and bake an additional 20 minutes. Loosen edges of potatoes with a spatula, and invert onto plate. Sprinkle with remaining fresh thyme.
