Pumpkin Seed and Pesto Stuffed Mushrooms
In a medium skillet, cook mushrooms cap side down for 5 minutes. Turn mushrooms over and cook another 5 minutes. Remove from heat, and blot with paper towels to dry.
Reserving 2 Tbs pumpkin seeds, place remaining 4 Tbs pumpkin seeds and all remaining ingredients in a food processor. Process until well blended.
Fill each mushroom cap with pesto, and top with reserved pumpkin seeds.
