Parmesan and Sage Potatoes



Rinse potatoes and cut each into 8 lengthwise wedges (as close to the same size as possible). Drop into boiling water and boil until firm but not mushy. Drain well.

Melt butter in skillet over low heat until butter has clarified. Add sage to butter and cook for a minute to flavor butter, then add potatoes. Stir over medium heat for 10 to 15 minutes until potatoes have absorbed all the butter and are totally cooked.

Sprinkle with cheese and black pepper. Serve immediately.
