Pan Roasted Broccoli


Pan Roasted Broccoli


Part 1:
  • 4 lbs broccoli
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper
  • 4 Tbs vegetable oil
  • 0.5 cups + 6 Tbs water

  • Part 2:
  • 8 Tbs butter
  • 2 small shallots, minced
  • 4 medium minced garlic cloves
  • 0.5 tsp salt
  • 0.25 tsp pepper
  • 1 Tbs lemon juice
  • 0.5 tsp dry thyme leaves

  • Cut up the broccoli. Cut the florets into 1.5 inch long pieces. As for the stem, throw away the thickest parts and cut the rest of the stem into 1/4 inch pieces.

    Part 1: Heat oil in large pan and add broccoli stems. Stir-fry two minutes. Add florets and cook two more minutes. Add water, salt, and pepper and cook 2 to 3 minutes.

    Part 2: Melt the butter until browned. Remove from heat and add shallots, garlic, salt, and pepper. Stir one minute. Add lemon juice and thyme. Pour over broccoli and stir.
