Orzo with Zucchini
Heat the oil in a medium saucepan. Add the chopped onion, and cook for about five minutes until softened. Add the grated zucchini, and cook for about five minutes until softened. Stir in the orzo and garlic; cook for 2-3 minutes until the orzo is golden.
Add 1.5 cups water and the salt, bring to aboil. Reduce the heat and let it simmer, uncovered, for about 11 minutes until the orzo is tender. Sprinkle with the cheese and serve.
