Lentil and Potato Hash
Bring lentils and 2.5 C water to boil. Reduce heat, cover, and cook for 20-25 minutes. Drain.
Slice potatoes into large chunks and put them in a pot of boiling water for around ten minutes. Drain and set aside.
In large pan, saute onions, pepper, thyme, and rosemary in butter until tender.
Add potatoes to the pan. Cook over medium heat, stirring frequently for 8 minutes. Stir in the stock, lentils, salt, and pepper. Cook for 6 minutes. Optionally add basil or tomatoes before serving.
