Green Onion Pancakes
Rapidly stir flour and boiling water until well blended. Cool 3-5 minutes, mix in cool water. Knead until smooth. Cover and stand 30 minutes to an hour.
Knead briefly. Divide into 8 and roll into a ball, adding some flour to make the job easier if needed. Coat hands with sesame oil and flatten into 6 inch diameter pancake. Rub in 1 tsp sesame oil. Sprinkle 1/8 tsp salt and 1+1/2 tsp onions.
Roll up pancake, seal ends. Coil up like snail, tucking ends into center. Flatten until quite thin pancake shape.
Add enough oil to skillet so that oil almost reaches top of pancake. Heat on medium heat. Place a pancake in skillet and cover immediately. Fry 1 minute until golden and puffy. Brush pancake with oil, turn and fry 3 more minutes.
