Grated Zucchini Saute
Shred the zucchini using a hand grater. Place the zucchini in a cotton kitchen towel and gather it into a ball. Twist hard to remove all the juices. Scrape the grated zucchini into a bowl.
Heat the oil in a large skillet over medium-high heat. Add the zucchini, basil, salt, and pepper and saute, tossing often, until crisp-tender. Sprinkle on the butter and Parmesan cheese, toss, and serve.
