Lemony Orzo with Asparagus


Ozro: Dressing:
Combine all dressing ingredients in jar. Seal jar and shake to emulsify a bit. Set aside.

Clean asparagus stalks and remove ends if inedible. Lay stalk in baking dish, and roast at 400F for 10-15 minutes until tender. Cut stalks into 1/2 inch pieces (ends can be longer).

Bring chicken stock and water to a boil. Add salt and turmeric. Add orzo and cook until tender, about 10 minutes. Add the asparagus, parsley, and dressing - mix well.
