Shaved Summer Squash Salad
- 1 medium zucchini
- 2 medium yellow squash
- 0.25 tsp salt
- 2 Tbs thinly sliced fresh mint
- 1 Tbs extra-virgin olive oil
- 0.5 tsp grated lemon rind
- 1 tsp fresh lemon juice
- 0.25 tsp freshly ground black pepper
- 3 (1 oz) thin slices prosciutto, chopped
- 0.25 C (1 oz) crumbled ricotta salata or feta
Shave squash into strips and toss with salt.
Combine salt, mint, olive oil, lemon rind, and pepper. Pour over squash and toss.
Saute prosciutto for a few minutes until crisp. Sprinkle prosciutto and cheese over squash.
