Grilled Peppers and Lentil Salad
Preheat grill. Coat bell peppers with cooking spray, then grill until blackened. Remove from grill. Place bell peppers in sealed bag and let stand 15 minutes. Peel and chop peppers.
Rinse and drain lentils, then place in large saucepan. Cover with water to 3 inches above lentils. Add onion and bay leaf to pan. Bring to a boil. Cover and reduce heat, simmer 18 minutes or until lentils are just tender.
Drain lentils and discard onion halves and bay leaf. Add lentils to bell peppers. Add remaining ingredients, stir well, and serve.
