Herby Cucumber Salad
- 0.25 C plain low-fat yogurt
- 2 Tbs coarsely chopped fresh dill
- 1 Tbs coarsely chopped fresh parsley
- 2 Tbs fresh lemon juice
- 1 Tbs extra-virgin olive oil
- 1.5 tsp coarsely chopped mint
- 2 tsp Dijon mustard
- 0.25 tsp sugar
- 0.25 tsp salt
- 0.25 tsp freshly ground black pepper
- 1 garlic clove
- 5.5 cups thinly sliced cucumber (about 2 large)
- 2.5 cups thinly sliced red onion
Combine all ingredients except cucumber and onion in a food processor and process until well blended.
Combine cucumber and onion. Drizzle with yogurt mixture, and toss to coat.
