Celery and Parsley Salad
- 3 C celery, thinly sliced on the diagonal
- 0.5 C celery leaves from center, coarsely chopped
- 2 C baby arugula
- 0.75 C flat-leaf parsley
- 2.5 Tbs fresh lemon juice
- 2.5 Tbs olive oil
- 0.5 tsp black pepper
- 0.125 tsp salt
Combine all vegetables in a medium bowl.
Shake all dressing ingredients in a jar to mix them, then drizzle over salad. Top with parmesan.
