Pineapple, Basil, and Cucumber Salad
- Pineapple, cored and cut into 0.5 inch think slices
- Cucumber, halved lengthwise and thinly sliced on the bias
- 0.5 C fresh basil, torn if large
- 1 Tbs olive oil
- 0.5 tsp salt
- pepper, to taste
Heat grill to high. Grill pineapple until grill marks appear, about 2 minutes per side. Let cool.
Toss pineapple with cucumber, basil, olive oil, and salt. Sprinkle with pepper.
