- 1 cup pitted kalamata olives
- 2 cloves garlic
- 1 tbs drained capers
- 2 tbs fresh oregano or 2 tsp dried
- 1/4 cup extra-virgin olive oil (quality matters)
- juice of 1 lemon
- 1/4 tsp dried red pepper flakes
Place all ingredients in a food processor fitted with metal blade and process until smooth.
Chill 20 minutes before serving.
