Tofu Cheese Skillet
Heat the oil in a large skillet over medium-high heat until hot. Stir-fry the tofu until golden, about 10 minutes. Remove the tofu to a platter.
If the pan has no oil left, add a little more, and saute the onions, squash, and pepper until crisp-tender, about 10 minutes.
Return the tofu to the pan, toss, and stir in the tomato sauce. Season with pepper and cook 2 minutes, or until hot and bubbly. Sprinkle on the cheese, and cover the pan. Cook 1 or 2 minutes, or until the cheese has melted.
