Heat oven to 375 degrees. Sauté onion in bacon drippings until tender. Place crepes in individual soufflé dishes, allowing crepes to flute. Divide bacon, onion, and Swiss cheese equally onto the crepes.
Beat eggs with cream, milk, salt, pepper, and nutmeg. Pour egg mixture into crepes. Place dishes on baking pan in upper 1/3 of oven.
Bake at 375 degrees for 25-30 minutes until puffed and browned. May be served in or out of dish. To remove from dish, loosen with knife tip.
