Baby Potatoes with Tomato-Corn Saute
Boil potatoes for 15 minutes or until tender. Drain.
Heat oil in pan over medium-high heat. Saute corn, shaved garlic, salt, and crushed red pepper for 4 minutes. Remove to bowl.
Melt butter in pan. Add potatoes and saute for 3 minutes. Return corn mixture to pan along with tomatoes. Cook for 2 minutes. Top with cilantro and cheese.
