Cook lentils according to package directions, adding 1 tsp tumeric. The lentils should remain firm.
In a large skillet, heat 1 Tbs oil over medium-high heat. Add the garlic and saute 30 seconds or so. Add the parsley, scallions, green beans, carrots, tomatoes, cumin, and salt. Cook for 5 minutes before adding the lentils, remaining oil, and remaining tumeric. Cook another 5 minutes and serve.
