Grilled Pita Pizza
Combine tomatoes, olives, onion, olive oil, mint and optional shrimp in small bowl to blend (can also saute). Warm grill to minimum heat, or turn oven to broil.
Spray one side of each pita bread with olive oil, and grill that side down until very lightly charred. Turn pitas over and spray uncooked side. Put 1/4 of the mixture on the charred side, and sprinkle with cheese. Return to grill/oven, and cook until tomato mixutre is wam but pita is not charred, about 2 minutes.
Alternate toppings: spinach and artichoke hearts; sindried tomatoes; carmelized onions and feta.
