Falafel Patties with Tzatziki
- 2 garlic cloves
- 1 can chickpeas, rinsed and drained
- 0.25 C all-purpose flour (or chickpea flour?)
- 0.25 C fresh flat-leaf parsley
- 2 Tbs tahini
- 1 tsp baking powder
- 1 tsp cumin
- 1 tsp grated lemon rind
- 0.25 tsp salt
- 0.5 tsp black pepper
- 2 Tbs olive oil
- 1 medium English cucumber, coarsely chopped
- 0.75 C low-fat yogurt
- 0.5 C chopped fresh mint
- 1 Tbs fresh lemon juice
Add all ingredients except olive oil to food processor. Process until finely ground.
Heat oil in pan. Shape mixture into tiny balls (or larger patties which then get crumbled). Cook until browned.
Tzatziki: Combine all ingredients in a bowl.
