Brussels Sprout with Bacon and Dressing
Thinly slice bacon, cook until crisp, and remove bacon to drain. In bacon drippings, saute bread for 5 minutes until crisp. Remove from pan.
Add olive oil to pan over medium heat, and saute sliced Brussels sprouts for 2 minutes. Cover pan, and saute for another 2 minutes. Combine all remaining ingredients in a jar, and shake to emulsify.
Add vinegar mixture to Brussels sprouts and stir. Remove from heat. Top with bacon-y croutons.
