Szechuan Stir Fried Shrimp
Mix the shrimp with a pinch of the salt, the egg white, and cornstarch paste until well coated.
Heat some oil in a wok and stir-fry the shrimp for a minute. Pour out all but 1 Tbs or so of the oil. Add green onion, ginger and bell pepper, stir-fry for 1 minute. Add the remaining salt and sugar. Stir fry for another minute, add the soy sauce and wine and blend well. Sprinkle with seasame oil.
