Andouille Sausage Jambalaya



Heat oil and cook sausage until browned. Remove sausage, but reserve drippings. Drain sausage on paper towels, and place in 5 qt slow cooker

Add onion, celery, and bell pepper mixture to drippings. Add Creole seasoning and thyme. Saute 5 minutes until vegetables soften. Add to slow cooker. Also add tomatoes and chicken broth to slow cooker. Cover and cook on LOW for 4 hours.

Cook rice according to package directions. Stir cooked rice and shrimp into sausage mixture. Cook additional 15 minutes on HIGH or until shrimp turn pink. Top with parsley and green onions.
