Roasted Shrimp with Broccolini
- 1 lbs broccolini, trimmed
- 0.75 lbs large shrimp, peeled and deveined
- 0.25 cup green onions, sliced
- 1 Tbs ginger
- 0.5 tsp salt
- 2 tsp olive oil
- 2 Tbs shrimp butter
- cooked rice
Shrimp Butter (8 Tbs yield)
- 1 cup butter
- 4 cups raw shrimp shells (6 oz)
Shrimp Butter: Melt butter in a medium sauce pan over medium heat. Add shrimp shells to pan, and cook for 15 minutes, stirring frequently. Strain buttr mixture through a fine mesh sieve.
Cook Broccolini in boiling water for 2 minutes or until nearly tender; drain.
Add oil to a large skillet and set over medium-high heat. Add onions and ginger, saute 1 minute. Add shrimp, salt, and broccolini then saute 4 minutes or until shrimp are done. Stir in shrimp butter and cook for 30 seconds or until butter warms. Serve over rice.
