Mediterranean Stuffed Chicken
Warm the oven to 400 degrees. Drain the peppers, and squeeze out the excess liquid. Warm the feta cheese in a microwave for around 30 seconds. Combine it with the peppers, spinach, basil, and optional quinoa.
Make one slit down the middle of each chicken. Suff each chicken with the cheese mixture. Poor the chicken stock/cooking wine in a shallow baking dish. Place the stuffed chicken breasts in the dish. Salt and pepper the chicken. Spray the chicken tops with vegetable oil cooking spray.
Cover the chicken with aluminum foil. Cook in oven for 35 minutes. Remove foil, and turn chicken over. Put back in oven for 10-15 minutes.
