Easy Chicken Verde Enchiladas



Set oven to 400F.

Combine first 8 ingredients in a medium saucepan. Bring to a boil, reduce, heat, and simmer 4 minutes. Stir in chicken; cook 1 minute or until heated. remove from heat. stir in tomato, avocado, and optional sour cream.

Microwave tortillas for 45 seconds to soften. Evenly divide chicken mixture into tortillas, roll up tortillas, and place seam-side down in oiled 11x7-inch backing dish. Top with cheese. Bake 30 minutes. Sprinkle with cheese.
