Marinate the chicken with the marinade for at least 15 minutes. Mix the sauce together and set aside.
Heat up a wok with 1 Tbs cooking oil and stir-fry the chicken meat until the color turns white. Set aside.
Add 1 Tbs of cooking oil into the wok and add in the giner, bell peppers, and onions. Stir-fry for several minutes until fragrant, then add the chicken meat and cashew nuts. Stir-fry until the chicken is cooked through. Add the sauce and stir until well blended. Serve.
