Heat oven to 375F. Stab the roast with a steak knife and insert the whole garlic cloves. Dust the top of the roast with salt, pepper, and other spices.
Set roast ribs down, fat-side up in a roasting pan. Do not elevate. Do not add water. Do not cover.
Cook for 1-1.25 hours, depending on size. Turn oven off and let the roast sit for 2-7 hours (the longer the better). Do not open the oven ever during this process. Turn the oven back on at 300F, and cook for 30-45 minutes more for rare.
