Pineapple Pork Meatballs
Mix pork, water chestnuts, green onion, garlic, egg, salt, 1 tsp cornstarch and soy sauce. Blend well. Shape mixture into balls, one inch in diameter. Roll in cornstarch.
Sauté meatballs in oil until browned on both sides (about 10 minutes). Set aside.
Drain pineapple juice into sauce pan. Stir in ginger, cornstarch and soy sauce. Bring to a boil, stirring constantly, until mixture thickens and becomes clear. Mix in the pineapple chunks and green pepper. Add meatballs. Heat through. Keep hot until ready to serve.
