Orange Walnut Pork Stir-Fry
Cook green beans, covered, in a small amount of boiling salted water for 4 minutes, then drain. For sauce, stir together orange peel, orange juice, sherry, cornstarch, and bouillon. Set aside.
Heat wok, and add cooking oil. Add garlic and sauté for 15 seconds. Add carrots and cook for 1 minute. Add green beans, cook for 1.5 minutes. Add green onions and green peppers, cook for 1.5 minutes. Remove vegetables.
Add half of the pork to the heated wok, and stir-fry until cooked through (about 3 minutes). Set aside, and then cook the other half of the pork. Return all pork to the wok, and push to the sides.
Stir the sauce, and add to the center of the wok. Cook until thickened and bubbly. Stir pork, and cook another minute. Return vegetables to the wok and coat with sauce. Add mandarin oranges. Cover and cook 1 minute. Add walnuts, and serve over cooked rice.
