Cube pork into 0.75 inches sides. Coarsely chop onion. In heavy roaster, put 0.5 C vegetable oil and heat. Put 1 C flour in paper bag and add pork spices and shake.
Put flour dusted pork pieces in oil and sprinkle with spices listed. Brown and turn frequently. Add onion and garlic, turning with meat until tender (add more oil if necessary). Mash tomatoes and add to meat and onions. Simmer.
Roast and peel anaheim chilies, cut into 1 inch pieces. Add to mixture. Stir and simmer 2 hours or until pork is soft and chilies tender. May add hot water to water down, flour to thicken, and/or crushed red peppers for hotness. Serve with corn torillas.
