Cherry Cake


Note: does not include frosting. Angel food cake frosting goes well.

Preheat oven to 250F. Grease and flour 3 round pans.

Whisk together flour, baking powder, and salt.

In a second bowl, combine egg whites cherry juice, milk, extracts, and vegetable oil. Blend together with a fork.

In the bowl of a mixer, add the butter and beat at medium speed to soften. AD the sugar and continue to beat until lightened in color and fluffy, approximately 3 minutes. Add half the flour mixture to the mixing bowl, and blend at low speed until just combined. Alternate wet and dry mixtures until blended - but do not over beat.

Stir in cherries. Add to baking pans. Bake for 30-35 minutes or until done.
