Bratwurst and Pepper Stew
- 4 bratwurst, frozen
- 1 large onion, sliced
- 3 carrots, sliced diagonally 1 inch thick
- 2 large potatoes, cut into 1/2 inch cubes
- 2 ribs of celery, sliced
- 2 sliced bell peppers
- 8 cloves of garlic, thinly sliced
- 2 can beef broth
- 1 can quality beer
- 0.25 teaspoon black pepper
- 1 tsp dried tarragon
Slice the bratwurst lengthwise, and then into 1 inch pieces. Saute the bratwurst and the onion until lightly browned.
Combine everything into a crock pot. Cover and cook on LOW for 6-8 hours.
